Warming Spice and Raven’s Rose Black Garlic Balsamic Reduction
Fresh market cherries need very little, but they take beautifully to warmth.
For this preparation, the cherries stay raw and vibrant while a small pot of Raven’s Rose Black Garlic Balsamic Reduction, citrus, salt, and spice is gently warmed to about 120°F — just enough to wake the aromatics without cooking the fruit. The warm reduction is poured over the cherries, slipping into the cut edges and carrying notes of black pepper, chile, and baking spice deep into the bowl.
The result is glossy, dark, and alive: sweet cherries with a savory balsamic edge, the molasses-tamarind depth of black garlic, and a slow trail of heat.
Ingredients
Makes about 2 cups
2 cups fresh cherries, pitted and halved
3 to 4 tablespoons Raven’s Rose Black Garlic Balsamic Reduction
1 to 2 teaspoons fresh lemon juice
1 teaspoon honey or maple syrup, optional
1 pinch sea salt
⅛ teaspoon cracked black pepper
⅛ teaspoon Aleppo pepper, Urfa biber, or mild chile flakes
1 small pinch cinnamon or allspice
Optional: tiny pinch smoked paprika or crushed coriander seed
Method
Place the pitted and halved cherries in a heat-safe bowl or clean jar.
In a small pot, combine the Black Garlic Balsamic Reduction, lemon juice, honey or maple if using, sea salt, black pepper, chile, cinnamon or allspice, and any optional spices.
Warm gently over low heat, stirring often, until the mixture reaches about 120°F. It should be warm and fragrant, not simmering. Avoid boiling, which can dull the brightness of the reduction and overpower the fresh cherry flavor.
Pour the warm spiced reduction over the cherries.
Stir gently to coat, then let the cherries sit for 20 to 30 minutes at room temperature before serving. For a deeper soak, cover and refrigerate for 2 to 4 hours.
Taste before serving and adjust with a little more lemon juice for brightness, another drizzle of reduction for depth, or a pinch more chile for heat.
Keeps refrigerated for 3 to 4 days.

Spoon over whipped goat cheese, ricotta, burrata, or blue cheese.
Serve alongside grilled pork chops, duck breast, lamb, or charred sausages.
Pile onto crostini with soft cheese and toasted walnuts.
