Our Approach to Black Garlic

At Columbia Bar, we believe in precision, safety, and real flavor. That’s why we craft our black garlic using a thermal aging process, not fermentation.

Over the course of 12 to 14 days, whole garlic bulbs are gently heated at 170°F, activating the Maillard reaction — allowing the natural sugars and amino acids to develop deep, umami-rich flavor; the same process that gives roasted coffee or baked bread their rich flavor. This creates a smooth, sweet, and complex ingredient with none of the risk associated with fermentation.

We do it this way because it’s safer, more consistent, and just plain delicious.
