Preparation
Preheat a grill or grill pan over medium-high heat.
Cut the peaches in half and remove the pits. Brush the cut surfaces lightly with olive oil.
Place the peaches cut side down on the hot grill and cook for 2 to 4 minutes, until distinct grill marks form and the surface begins to caramelize. Turn and cook for another minute or two, just until warmed through. Avoid cooking them until completely soft.

Preparation
Preheat the oven to 400°F.
Cut the peaches in half and remove the pits. Arrange them cut side up in a baking dish and brush lightly with melted butter, ghee, or olive oil.
Roast for 12 to 18 minutes, depending on ripeness, until the fruit is warm, fragrant, and tender but still holds its shape.
