Through Rainfall and Fog: Cooking into Fall with Raven’s Rose Black Garlic

Through Rainfall and Fog: Cooking into Fall with Raven’s Rose Black Garlic

As the rains return to the Pacific Northwest, the tempo of the landscape slows. Moss rehydrates, leaves slick to the ground, and the air grows fragrant with petrichor and woodsmoke. In this shift, we find our way back to the kitchen—seeking warmth, depth, and the kind of flavors that linger long after the meal has ended.

Raven’s Rose Black Garlic is made for this season. Its balsamic richness and molasses-dark depth call to mind banked embers and damp soil. Aged slowly for nearly two weeks, it transforms garlic's spicy character into something soft and orchestral. This fall, we’re leaning into its versatility alongside our Black Garlic Balsamic Reduction and the limited-release Black Garlic Hot Honey. Below are a few ways we’re using these provisions in our autumn kitchen.

1. Roasted Delicata with Black Garlic Balsamic Glaze
Slice delicata squash into half-moons and roast until tender and caramelized. Just before serving, drizzle the glaze generously over the squash and finish with flaky salt. The vinegar's mellow tang and the black garlic's umami lift the sweetness of the squash into something deeply nourishing. Try adding a little goat's cheese or feta for a tangy combo.

2. Charred Carrots with Black Garlic Hot Honey
Toss chopped carrots in olive oil and roast or grill until charred at the edges. While still warm, brush with Black Garlic Hot Honey and return to the oven for a final few minutes. The result is sticky, spicy, and slightly smoky—a side dish with backbone. Try a little blue cheese crumble to add some funk and depth.

3. Black Garlic Butter for Bread or Grains
Mash several cloves of Raven's Rose Black Garlic into softened butter with a pinch of salt and lemon zest. Spread onto warm sourdough, melt into farro, toss with steamed vegetables, or dollop over roasted mushrooms. It’s humble, elemental, and utterly transformative.

These are not fussy recipes, but rather invitations: to explore, to taste slowly, to savor what the rainy season brings. Each provision carries the fingerprint of time, care, and a sense of place.

You can find Raven's Rose Black Garlic, along with the balsamic reduction and hot honey, in our online shop or at fall markets across Oregon.

Let the rains come. We’ll be here, cooking by the glow.
